We built this salad to be the energy boost you need in the middle of a hot summer day. Quick, simple, and easy to make, but delicious and packed with vitamins, proteins, and minerals. This nutritious summer salad is a marriage of sweet, refreshing blueberries and spicy, filling nutrient dense greens. The fruits and veg are tossed in a thick, sweet vinaigrette that’ll have you thinking you’re in the Tuscan hills of Italy, and topped with a creamy balance of pumpkin seeds. For finishing touches, add a light pinch of salt OR for our non-vegan friends; a handful of crumbles berry or honey goat cheese. Either way, this dish will have you full and satisfied on your hot summer day.

Sunflower Microgreens: sunflower microgreens bring healthy fats, protein, chlorophyll, vitamins and minerals to this recipe. Additionally, these microgreens have a nutty, heavy, almost creamy flavor to the dish.
Broccoli Microgreens: These microgreens also have a nutty flavor. In dishes like these where nutty and rich flavors are prominent, we like to add in the broccoli micrgreens due to their now anti-cancer nutrients, sulforaphane.

Blueberry Sunflower Salad

- 1 ½ cup Sunflower Microgreens
- ½ cup Broccoli Microgreens
- ½ cup Radish Microgreens
- ½ cup Spinach
- 1 cup Blueberries
- ½ Red Cabbage
- 1 large Cucumber
- ¼ cup Raw Pumpkin Seeds
- ¼ cup Olive Oil (extra virgin cold pressed)
- 3 tbsp Balsamic Vinegar
- 2 tbsp Balsamic Glaze
- 1 pinch Sea Salt

Plate spinach, microgreens, blueberries, cabbage, and seeds.

Put balsamic glaze, vinegar, and olive oil into separate bowl and whisk vigorously until well incorperated

Pour dressing over salad and add salt if desired.

**Non-Vegan Option: for extra creaminess add 1/2 a cup of crumbled feta cheese.
